The Eliminator technology can be used in virtually any food processing function where the quality of the product could be improved by rapid cooling of liquids. While the concept behind the Eliminator is simple, snap cooling in a vacuum using a thin film of liquid over a very cold heat exchanger has an astounding effect on food quality. Rapid cooling can improve the quality of the product and reduce waste by reducing the chemical and bacterial deterioration experienced during many slow cooling processes. While in the dairy industry the Eliminator would be used in a vacuum process, other food liquids such as fruit juices, distilled alcoholic beverages, brewed beverages, wines, or other food liquids can be cooled without the vacuum process. The vacuum allows some flash cooling and removal of air to take place on raw milk to eliminate foaming problems, however, liquids that have already been processed may not need the vacuum to improve quality.
